Chicken Stir Fry

4 chicken thigh fillets
1 broccoli
½ cauliflower
4 carrots
4 celery sticks
1 capsicum
1 small onion
½ cup peanuts
½ tablespoon minced garlic
¾ cup chicken stock
2 teaspoons cornflour
2 tablespoons soy sauce

Noddles/rice to serve.


Chop vegies into sir fry size pieces. Dice chicken and stir fry to almost cooked. Cook vegies till tender. 

In a small bowl mix cornflour, soy sauce, garlic and chicken stock.  Add sauce mixture to stir fry and heat through. 

Add peanuts. Serve with noddles/rice.
