Sweet and Sour Meatballs

600g minced meat
1 ½ cups water
1 carrot cut into strips
½ capsicum cut into strips
½ onion or spring onion cut – diced
250g beans
½ tin pineapple pieces
½ cup sugar
3 tablespoons vinegar
2 tablespoons soy sauce


Mix mince with spices and breadcrumbs and roll into balls.  Fry until brown on the outside.   

Add rest of ingredients except pineapple.  Bring to boil and simmer till tender.  Thicken with cornflour, add pineapple.  

Serve with rice or mashed potatoes.

You can double the recipe, it freezes well.
