Sweet & Sour Meatballs

Ingredients:Mince meatballs

Sauce

30g butter
2 carrots sliced in strips
1 onion diced
green capsicum sliced in strips
red capsicum sliced in strips
1x 470g can pineapple pieces, drained & juice reserved
2 & 1/4 cups water
2 teaspoons chicken stock powder
2 & 1/4 tablespoons cornflour
2 tablespoons soy sauce
3 tablespoons tomato sauce
Salt & pepper


Make mince meatballs (I usually use about 500g mince meat, mix in a packet of french onion soup, finely chopped onion, breadcrumbs & 1 egg).

Shape into small balls.

Fry mince balls in butter, shaking pan occasionally to keep meatballs round in shape. Remove from pan when cooked. (Don't need to clean pan before next step).

Melt butter in same frying pan & saute carrots, onion & capsicums for 3 minutes.

Blend cornflour, water, chicken stock, soy sauce & tomato sauce in jug, then add to vegetables.

Season with salt & pepper.

Add reserved pinapple juice.

Stir until sauce boils and thickens.

Return meatballs to pan, add pinapple pieces.

Simmer, uncovered for 5-10 minutes. Serve over rice or mash potato.






Note: I use whatever quantity of vegetables to suit our family, you can add other vegies of choice too. The colour of this dish when ready to serve up looks so nice!
